Bone broth for health?

Bone broth has proven to be extremely healing for our digestive tract.  It is high in collagen, gelatin, glycine, proline and glutamine- vital nutrients provide the sustenance for the growth and reconstruction of your intestinal wall.

I wanted to include an easy bone broth recipe that was extremely helpful to me while I was healing from my autoimmune thyroid disease (Part 1: What is Hashimoto’s Thyroiditis?).  I hope it helps you as much as it has helped me in the past year.

That is why I wanted to share this bone broth soup recipe here for you.

I also want to add that when I am too busy to make my bone broth or even tired of drinking it (it happens occasionally!) that I have stumbled onto an easy way to get the same benefits without all the work.

In the mornings, I will take Ancestral Supplements Grass Fed Bone Marrow — Whole Bone Extract to ensure I get the necessary nutrients for my gut without the added work.  It took me a while to fine this was an option so I hope I can provide this easy shortcut for you if needed.

EASY CHICKEN AND RICE BONE BROTH SOUP

  • 1 whole chicken
  • 2 celery ribs
  • 2 large carrots
  • 2 cups cooked rice
  • 1 quartered onion
  • 1 bay leaf

Wash the chicken and place it in a large stock pot.  Cover it with water. Chop carrots and celery in to large chunks, quarter the onion, and add to stock pot.  

Season with salt, pepper and a bay leaf.  Simmer for 2 hours or until chicken is tender.

Remove carrots, celery, onion.  Chop the carrots, celery, and onion into smaller chunks and add back to the soup.  

Remove the chicken and shred or dice the meat and add back to the soup.  Add 2 cups of brown rice. That’s it!

Notes:  

1. Over time,  I have found I prefer to chop the carrots, celery, and onion into smaller pieces in the beginning so I don’t need to pull them back out later and chop when I pull out the chicken to shred it.

2. I also like a bit of a richer flavor to the bone broth (soup) so I will add in some chicken base to taste.

3. This is an incredibly easy soup to freeze for later!
